Summer vibes on the lake

A slight breeze rolling in off the lake, the sound of a boat slowly cruising by, and the rays of the sun warming my shoulders; I was made for this kind of peace. It’s Christmas day, and I’m missing summer so badly. Thankfully, it hasn’t been too cold this winter yet, but it’s constantly gray. The stress of the holidays and the end of the year weighs heavily, and I miss the carefree, bright, warm days of late spring, early summer. 


So when I was invited to go check out Bar Lago on Lake Conroe, I jumped in the truck and hit the road.

Washington Revelo and his family frequent Lake Conroe in Montgomery, Texas; they love the water and shore life. In March 2023, they noticed that the lake was lacking a great bar; so they set out to create a place to hang out, share a bite to eat, and have a few drinks. 


Washington’s dad loved to cook, and he passed down the passion. Although Washington never attended culinary school, he grew his skills over the years by watching his dad, consuming all of the cooking content he could, and now he’s on his third bar concept that serves food. He is one of 3 partners in Bar Lago. It’s been open since March of 2023, bringing a fun and bright bar concept to the Lake Conroe shore area. 


From perfectly crafted drinks, to fresh ceviche, my experience felt like an island getaway. The bar is basically all windows and big doors, to let in the light and fresh air. 


Their signature drink, the Summer Spice, is their version of a spicy margarita. Cucumber and jalapeno infused tequila, fresh lime juice squeezed daily, passion fruit puree, Cointreau Liqueur, shaken with a fresh jalapeno slice. Fresh, cucumber-y, bright and summery, and only lightly spicy; because you know I’m a weenie!


The passion fruit mojito was a light and refreshing drink. Passion fruit puree, Bacardi, fresh lime juice, muddled mint and lime, topped with soda. Crisp and easy to sip on. 


The Blackberry Bourbon margarita wasn’t a sweet drink, but it was full of depth and layers of flavors. Woodford Reserve bourbon, blackberry puree & muddled blackberries strained, fresh lime juice, orange liqueur, sweet & sour, another super popular drink.  


I’d have a hard time picking my favorite out of the three, but if you put me on the spot, I would have to say the mojito. It wasn’t too sweet for me, but it had enough and I love fizz while I’m having lunch. If I wasn’t eating, I would pick the blackberry bourbon marg, because I love the richness of the flavors.


The first dish to come out was a sampler of their tacos; one of each, a cilantro lime chicken, mahi mahi, and a shrimp taco. Each topped with a house mango pico (red & green peppers, mango, cucumbers, onions, cilantro), cotija cheese, and a light drizzle of their red and green salsas. The red sauce is medium heat, with rich onion and garlic flavors; obviously the only way to have salsa. Mahi is my favorite fish, but the shrimp taco was my favorite, it was incredible.

Bar Lago’s Ceviche uses mahi mahi and shrimp, marinated in a lemon lime mix. Then it’s piled in a bowl of house made sauce filled with their mango pico. Served with a side of fresh fried chips for scooping. Hands down, my favorite of the day. So fresh and summery. 


The crispy pork belly bites are definitely a shareable size, a hearty portion for you and your friends to snack on. Pork belly marinated in an adobo sauce, with pickled jalapeno and red onions scattered on top, and house crafted salsa verde on the side for dipping. 


I had the privilege of getting to test out some of their new brunch items before they were released. The eggs were perfectly over medium, which is no small feat. The maple peppered bacon was crispy and a touch sweet and spicy. Fresh fruit on the side, and potatoes that were showstoppers. Coated in an adobo marinade and cooked with sauteed red and green peppers, and onions, these potatoes were absolutely incredible. 


The breakfast tacos were served on the same warm tortillas, with a couple slices of the maple peppered bacon, then piled high with fluffy scrambled eggs that had cheddar mixed in. Then, all of that was sprinkled with cilantro and cotija cheese, and served with a side of their red salsa. 


If you have a sweet tooth like me, you’re going to want to order the ricotta balls. Italian-inspired donuts that are little clouds sent straight from heaven. Crispy on the outside, soft, fluffy, and moist on the inside. Sprinkled with powdered sugar and drizzled with honey. 


This bar has a fun atmosphere that’s upscale enough to take your spouse to for a special occasion, but casual enough for you and your girlfriends to have a fun brunch on the patio.
