The Best BBQ Mac and Cheese

Happy National Mac and Cheese Day!


One of my favorite foods in the world is Mac and Cheese, so I celebrate hard for this holiday.

Ladies and Gentlemen, I present to you the Holy Grail, the bomb.com, the best BBQ Mac and Cheese I have ever laid taste buds on. This is a basket full of gooey, buttery, cheesy homemade Macaroni & Cheese, topped with slow smoked brisket that is infused with mesquite smoke and drizzled with perfectly balance sauce. This is the Brisket Mac & Cheese, and this is Snook BBQ Co. in Snook, Texas.


A family owned business, generation in the making, @snookbbqco makes everything from scratch. Including the seasoning blends, banana pudding, and all their sauces. Owner Matthew Collins got the idea to open his own bbq place in 2020, when the pandemic hit, originally operating at a different location but eventually building the place they have now along with the beer garden next door. His father, Robert Collins, has been in the restaurant and bbq'ing business for most of his life.


Starting at 9pm the night before, Robert smokes their brisket for 8-10 hours over live mesquite coals, flipping and basting it every hour. The basting process isn't just slapping some bbq sauce on it, it's a family baste recipe. In fact, all of their recipes have been passed down through the years of their Czech heritage. I might have come in search of a celebration worthy mac & cheese, but Matt made sure I got to try their specialty also. The Sweet Heat Bacon is a 1/2 inch strip of pork belly, dipped in a spicy mustard sauce, skewered, and slow smoked. And wow it was phenomenal! Tender, moist, and just the right level of heat.


A fun question I like to ask restaurant owners is, if you were one of the foods you serve, what would you be and why. This time I asked the folks that work with them. After much laughter and comments that won't be mentioned here 🤣, this is what they decided on. "Matt is the BBQ sandwich because he's a little difficult, and Robert is this pickles and onions that holds everything together.'" Love it! Don't worry Matt, it was a compliment!
